Recipe of the month

It has been a while since we posted a recipe here on the blog, so since fall is probably my favorite time of the year to cook, I thought I'd post this recipe which a good friend of mine shared with me!

Dinner in a Pumpkin!!

Ingredients:
     1 Medium pumpkin
     1 Onion, chopped
     2 Tablespoons vegetable oil
     2 pounds ground beef
     2 Tablespoons soy sauce
     2 Tablespoons brown sugar
     1 (4 ounce) can sliced mushrooms (I like to substitute fresh mushrooms, if possible)
     1 (15 ounce) can cream of chicken soup
     1 1/2 cups cooked rice (for a healthy version, use brown rice)
     1 (8 ounce) can sliced water chestnuts

Directions:
  1. Wash the outside of the pumpkin, cut off the top and clean out the pulp and seeds.
  2. Preheat oven to 350 degrees F
  3. In a large skillet saute onions in vegetable oil until tender, add meat and cook thoroughly, drain excess fat.
  4. Add soy sauce, mushrooms, brown sugar and can of soup, simmer mixture for 10 minutes, stirring occasionally.
  5. Add cooked rice and water chestnuts.
  6. Spoon mixture into the cleaned pumpkin.
  7. Cover the pumpkin with the top of the pumpkin and place entire pumpkin on a baking sheet. 
  8. Bake 1 hour or until the pumpkin flesh is tender.
  9. Remove pumpkin from the oven and place on a platter to serve.  Food will stay hot for quite awhile. 
  10. Scrape out part of the pumpkin flesh to serve with the meat mixture as your vegetable.
